 “HG” E/P Altura (Chipas) – Washed Arabica

 

Origin: OCIA certified Café Cumbre Estate coffee from the Seirra Madre Mountain Range.

 

An abundant shade canopy throughout the farm provides the perfect habitat for birds and insects whilst at the same time is a key in producing Arabica beans of the highest quality.

 

Coffees are processed with the latest Ecological and Electronic Technology available.

 

Coffee is harvested from January through to April at 1300m above sea level.

 

Roast/Cupping Notes: When roasting the coffee shows signs of turning very quickly after the 1st crack and one would suggest that the heat should be applied very lightly as it could get away from you in the roast if you are roasting dark.

Once past the 1st crack, the coffee really moves into the sugar caramelising area with a blast.

The percentage of good pea berries adds to the cup quality.

Medium flavour, medium acid, medium to heavy body with almost syrup like mouth feel.

 

Hints of floral and dry cocoa. .
